BELL PEPPER EGGS AND SMOKED SALMON

INGREDIENTS

2 eggs
1 large yellow bell pepper
1 ounce smoked salmon
4 cherry tomatoes
1 small red onion
1 tbsp. vegetable oil
½ green bell pepper
Pinch of black. pepper

Tip: Smoked salmon usually comes salted,  so avoid adding salt to this dish

TIME: 30 mins | serves 1

PREPARATION

1. Chop your green pepper and onions.
2. Slice your tomatoes in halves, cut off the crown of your yellow bell pepper and remove the seeds.
3. In a sauce pan, medium heat add the vegetable oil, add egg, peppers, tomatoes and salmon and scramble.
4. Stuff into yellow bell pepper.
